A HACCP weekly form is a fixed overview where you track, per day of the week, what has been checked: fridge and freezer temperature, cleaning, and incoming delivery checks, so an entire week of records is complete and inspection-ready at a glance.
What goes on a HACCP weekly form?
A weekly form bundles the recurring checks of a commercial kitchen onto a single sheet, with a column per weekday and a row per check:
- Fridge and freezer temperature, usually once or twice a day.
- Delivery checks, including the temperature goods arrive at.
- Cleaning of kitchen surfaces, cutting boards and equipment.
- Any deviations or incidents, along with the action taken.
Why use a weekly form instead of separate daily sheets?

What do you fill in daily on the temperature section?
For each fridge and freezer you record the reading, the time, and who checked it. The standard is 7 degrees or below for refrigeration and minus 18 degrees or colder for the freezer. If a reading is off, note what action was taken, for example moving stock or calling the refrigeration engineer.
How do you check incoming deliveries on the form?
On receipt you check not just whether the order is correct, but also the temperature the product arrived at. If a chilled product arrives too warm, note that separately, even if you decide to accept it anyway. What belongs in the cleaning section?

Is a paper weekly form enough for a food safety inspection?
A paper weekly form is allowed as long as it is complete and demonstrable, and you keep it for at least two years. In practice that is the weak point: a sheet that gets lost or has a skipped day is an immediate gap in your file. That lines up with the broader HACCP requirements for safe practice in a commercial kitchen set by the Dutch food safety authority, where a demonstrable, unbroken record is the central requirement. Missing records alone can already result in a fine, even if the refrigeration itself was working fine at the time.

Do I need to fill in the form every day, even when closed?
