Everything about the HACCP cleaning schedule for hospitality
What is a HACCP cleaning schedule?
A cleaning schedule sets out what needs cleaning in your business, how often, with which agent and how. Together with the sign-off sheet, where you tick off that each task is done, this is a fixed part of HACCP and the hygiene code. With this free tool you build your own schedule in a minute and receive it as a PDF by email, ready to print and put up.
Why is a cleaning schedule required in hospitality?
The food safety inspectorate checks whether your hygiene and food safety are in order. A completed cleaning log is proof that you clean structurally and verifiably. If you cannot show any record at an inspection, you risk a fine that can run from 525 euro. A well-kept schedule prevents fines and keeps your kitchen genuinely hygienic and safe.
What should a cleaning schedule contain?
A complete schedule names four things per task: what you clean (worktops, fridge, extraction hood), how often (daily, weekly or monthly), with which agent (all-purpose cleaner, degreaser, sanitiser) and the method. That way every member of staff knows exactly what to do, and you can show at an inspection that the whole business is covered.
How often and how long should you keep records?
Daily tasks are signed off every day, weekly tasks once a week and monthly tasks once a month. Have the person initial each task so it is clear who did what. Keep the completed sheets for at least two years so you can show them at an inspection.
Cleaning and temperature monitoring go together
Cleaning and cooling are the two pillars of a safe kitchen. Alongside a cleaning schedule you want to be sure your fridges and freezers stay on temperature. Coolwatcher measures that automatically, keeps your HACCP records inspection-ready and alerts you over WhatsApp, and even calls you at night, the moment a temperature drifts. That way both your hygiene and your cold chain are provably in order.
Want your cooling provably in order too? Coolwatcher combines a wireless temperature sensor with automatic logging. Also make your free HACCP temperature log or see the pricing.
