At what temperature should fish be stored?
Fresh fish carries a stricter standard than most other food: the temperature must never rise above 4 degrees, and the ideal range sits between 0 and minus 2 degrees. That lines up with the food safety guidance for fish from the Dutch Nutrition Centre, which recommends storing fish in the coldest part of the fridge and eating it the same day where possible. Why is fish extra sensitive to temperature swings?

Freezing is the best way to store fish longer: at minus 18 degrees or colder, bacterial growth almost stops entirely, and frozen fish typically stays good for up to 3 months, though fatty fish such as salmon keeps a little less long than lean fish such as cod. Always thaw fish in the fridge, never on the counter at room temperature, and use it as soon as possible after thawing, since it becomes just as perishable as fresh fish again.
