Storing meat: at what temperature and for how long?

At what temperature should meat be stored?
The ideal temperature for meat is around 4 degrees, since bacteria grow slowest at that temperature. That lines up with the storage guidance from the Dutch Nutrition Centre for the coldest spot in the fridge. The legal upper limit for refrigeration in hospitality is 7 degrees, but for perishable products like meat that is a ceiling, not a target. Minced meat and ground meat products are especially sensitive and should ideally be kept between 0 and 2 degrees, on the bottom shelf where the fridge is coldest.
How long does meat stay good in the fridge?
How long meat keeps in the fridge depends on the type:
- Minced meat and poultry: use within 2 days, and ground meat products such as steak tartare the same day.
- Larger cuts such as a roast, steak or chop: keep within 5 days.
- Deli meats from the chiller: always follow the date on the packaging, it varies a lot by product.
What happens if meat is stored too warm?
Above 7 degrees, bacteria multiply much faster, and with meat that risk is bigger than with most other products because it is a breeding ground for bacteria such as salmonella and campylobacter. That is exactly why food storage temperatures are so strict for meat, fish and dairy: a few degrees of difference decides whether a product still has days left or turns unsafe within hours.
The tricky part is that meat often does not smell or look off when it has been stored too warm, especially in the early stages. Bacteria such as salmonella do not measurably change smell, colour or taste until the contamination is already well advanced, so waiting for something to seem off is not a reliable check. Only the temperature itself tells you in time whether it is still safe.
How do you store meat safely in the fridge?
- Keep meat in its sealed packaging or a closed container, never loose among other products.
- Place meat on the bottom shelf, so any moisture cannot drip onto other products.
- Keep raw meat separate from cooked dishes to prevent cross contamination.
Can you freeze meat, and how long does it stay good?
Freezing is a good way to store meat longer, since bacterial growth almost stops entirely at minus 18 degrees or colder. Minced meat typically stays good in the freezer for around 2 months, while larger cuts often last several months longer. Always thaw meat in the fridge, not on the counter, so the temperature never spends too long in the dangerous zone between 7 and 60 degrees.

For HACCP records it is not enough to store meat by feel, you also need to be able to show that the fridge actually stayed within range.
